  • 1 bag (32 oz) frozen tater tots
  • 8 eggs large
  • 1 cup whole milk
  • 1 pound bacon cooked and crumbled
  • 2 cups shredded sharp cheddar cheese divided
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.25 tsp onion powder
  • 0.25 cup sliced green onions plus more for garnish

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.
  2. Cook bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Transfer to paper towels, drain, and crumble into bite-sized pieces.
  3. In a large mixing bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.
  4. Stir in 1.5 cups of the cheddar cheese, crumbled bacon, and sliced green onions into the egg mixture.
  5. Pour the egg mixture into the prepared baking dish, spreading evenly across the bottom.
  6. Arrange frozen tater tots in a single layer over the egg mixture, covering the surface completely in neat rows.
  7. Sprinkle the remaining 0.5 cup of shredded cheese over the top of the tater tots.
  8. Bake uncovered for 45-55 minutes, until eggs are set in the center, cheese is melted and bubbly, and tater tots are golden brown and crispy.
  9. Remove from oven and let rest for 5-10 minutes before serving.
  10. Garnish with additional sliced green onions and serve hot with optional toppings like hot sauce, salsa, or sour cream.

Notes

Make-Ahead: Assemble completely, cover tightly, and refrigerate up to 24 hours. Add 5-10 minutes to baking time. Freezing: Assemble in disposable pan, cover with two layers of foil, and freeze up to 3 months. Thaw overnight before baking. For extra-crispy tater tots, increase temperature to 375°F for final 10 minutes of baking.
