- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.
- Cook bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Transfer to paper towels, drain, and crumble into bite-sized pieces.
- In a large mixing bowl, whisk together eggs, milk, salt, black pepper, garlic powder, and onion powder until well combined.
- Stir in 1.5 cups of the cheddar cheese, crumbled bacon, and sliced green onions into the egg mixture.
- Pour the egg mixture into the prepared baking dish, spreading evenly across the bottom.
- Arrange frozen tater tots in a single layer over the egg mixture, covering the surface completely in neat rows.
- Sprinkle the remaining 0.5 cup of shredded cheese over the top of the tater tots.
- Bake uncovered for 45-55 minutes, until eggs are set in the center, cheese is melted and bubbly, and tater tots are golden brown and crispy.
- Remove from oven and let rest for 5-10 minutes before serving.
- Garnish with additional sliced green onions and serve hot with optional toppings like hot sauce, salsa, or sour cream.
Notes
Make-Ahead: Assemble completely, cover tightly, and refrigerate up to 24 hours. Add 5-10 minutes to baking time. Freezing: Assemble in disposable pan, cover with two layers of foil, and freeze up to 3 months. Thaw overnight before baking. For extra-crispy tater tots, increase temperature to 375°F for final 10 minutes of baking.
