Ingredients
  

Soup Base
  • 2 tbsp olive oil or butter
  • 1 lb chicken breast cut into bite-sized pieces
  • 1 onion finely chopped
  • 4 cloves garlic minced
  • 0.5 tsp red pepper flakes optional
  • 0.5 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp paprika
  • 0.5 cup sun-dried tomatoes drained and chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese grated
  • 2 cups baby spinach
  • 1 tbsp flour optional, for thickening
  • 1 tbsp fresh basil for garnish

Equipment

  • Large pot or Dutch oven
  • Wooden spoon

Method
 

  1. Heat oil in a large pot and sear chicken until golden; set aside.
  2. Sauté onion and garlic until fragrant.
  3. Add spices and sun-dried tomatoes; stir for 30 seconds.
  4. Pour in chicken broth and return chicken to pot; simmer 10 minutes.
  5. Add cream and Parmesan; simmer gently until creamy.
  6. Stir in spinach until wilted; season and garnish with basil.

Notes

Serve with bread or over pasta. Add mushrooms or orzo for variety.
