Ingredients
  

Eggs
  • 10 large eggs
  • 0.5 cup milk
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp butter or olive oil for greasing pan
Sandwich Assembly
  • 10 English muffins split and toasted
  • 10 slices cheddar or American cheese
  • 10 cooked sausage patties or bacon
  • Foil or parchment paper for wrapping

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Whisk eggs, milk, salt, and pepper. Pour into the dish and bake for 18–22 minutes until set. Cool and slice into 10 squares.
  3. Cook sausage or bacon and let cool on paper towels.
  4. Toast English muffins until lightly crisped.
  5. Assemble sandwiches with muffin, cheese, egg, and meat. Top with muffin half.
  6. Wrap each sandwich in foil or parchment paper and freeze up to 2 months.
  7. Reheat in microwave (2 min total) or oven (350°F, 25–30 min).

Notes

Cool all ingredients completely before wrapping to prevent sogginess.
