- Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, combine ground beef, 1 cup breadcrumbs, 2 eggs, minced garlic, Worcestershire sauce, oregano, Italian seasoning, salt, and black pepper. Mix gently until evenly combined.
- Take approximately 2 tablespoons of meat mixture and flatten in your palm to create a 3-inch disc.
- Place 1 tablespoon of shredded mozzarella in the center of the meat disc. Fold edges over cheese, pinching to seal completely.
- Roll the stuffed portion between your palms to create a smooth, round shape. Ensure all seams are sealed. Repeat with remaining mixture to make about 24 bites.
- Set up breading station with beaten eggs in one shallow dish and remaining breadcrumbs in another.
- Dip each meatloaf bite in egg wash, coating all sides, then roll in breadcrumbs to coat evenly.
- Place breaded bites on prepared baking sheet, spacing them about 1 inch apart.
- Bake for 18-22 minutes until golden brown and internal temperature reaches 160°F.
- Let rest for 3-5 minutes before serving. Serve warm with marinara, ranch, or your favorite dipping sauce.
Notes
Can be prepared ahead and refrigerated up to 24 hours before baking. Freezes well for up to 3 months. Reheat in 350°F oven for 10-12 minutes. Use a meat thermometer to ensure proper doneness.
